I absolutely love a good salad! There’s so many options and you can get creative with your ingredients to make the perfect meal or as a side dish. This is one of my favorites, easy and quick!

You will need…

1 Lemon (squeezed for juice)

¼ cup of extra-virgin olive oil 

Salt and pepper to season 

¼ tsp cumin 

3 cubed avocados

1pt cherry tomatoes sliced in half

⅓ cup of corn

1 cucumber cut into half moons

2 tbsp cilantro (optional)


In a small bowl mix lemon juice, oil, cumin and dash with salt and pepper

In a larger bowl combine avocados, cucumber, corn, cilantro and tomatoes.  Toss with dressing and serve immediately.

Great alone or I often times will add salmon on the side..  

Remember:  Avocados are rich in B vitamins which relieves stress
