Broccoli is a vegetable belonging to the same family as cabbage and cauliflower. There are many health benefits with eating broccoli as it’s full of antioxidants, vitamins and minerals.  It also protects against certain types of cancer and may also contribute to reducing inflammation. Studies also suggest that broccoli sprouts may improve insulin resistance in type 2 diabetic patients.  

Eating healthy along with exercise can provide a longer life span which should be something we all strive for. Broccoli can be eaten raw or cooked but I love it most in soup.  It’s hearty, great for those chilly nights and good for you too. Here’s one of my favorite soup recipes…hope you enjoy.

½ cup              melted butter 

½                     small onion (finely diced)

¼ cup              flour

2 cups             heavy whipping cream

2 cups             chicken stock

½ pound          broccoli florets chopped

1 cup matchstick carrots

8 ounces         sharp cheddar cheese (grated)

Saute onion in the melted butter then add flour and stir.  Add chicken stock, heavy cream,carrots, broccoli and cheese and slow cook for about 10-15 minutes.  Salt and pepper to taste.

Great with a slice of french bread or served alone.
